Can I prohibit Windows Update?

You cannot prohibit updates, but you can configure deferral of feature updates, which include major version upgrades, and quality updates, which include cumulative updates and security updates.
The setting location and the deferral periods you can set are as follows.

Profile > Windows Update > Defer updates tab
Feature updates: 6 months
Quality updates: 4 weeks
