Which features become unavailable if I use an iPhone / iPad without signing in to an Apple ID?
Several features use an Apple ID, but MDM can substitute for the following two.

App installation
By using VPP, you can distribute store apps to devices without requiring an Apple ID on the device.

Find My
By using Admin Lock, you can lock a lost device and retrieve its location.
For details about Admin Lock, see here.
MDM has no substitute for other Apple services such as iCloud and iMessage.
If you need any of these features, sign in with an Apple ID to use the device, or consider using third-party apps instead.
